These balls make the perfect afternoon pick me up. With a good balance of protein and healthy fats from the nuts, natural sweetness from the dates and energising cacao and maca, they’ll help you power through any work day or workout!
Makes 8-10 balls
Ingredients:
½ cup almonds
½ cup cashews
1/3 cup shredded coconut (and an extra 1/3 of a cup coconut for rolling)
6 medjool dates (pitted)
2 tablespoons raw cacao powder
1 teaspoon maca powder
1 tablespoon tahini
Directions:
1. Add all ingredients into a food processor or blender and blend until well combined.
2. Add 1 tablespoon of water to help blend if the mixture is too dry.
3. Role mixture into medium sized balls and then roll each ball in the extra coconut to coat.
4. Store in the fridge for up to 7 days.
