Recipe / Matcha Coconut Energy Balls

Matcha Coconut Energy Balls

Makes 12-15

Ingredients:

1 1/2 cup gluten-free oats
1 cup shredded coconut 
2 Tablespoons Matcha powder
12 Medjool dates (soaked in warm water for 10 mins and drained)
3 Tablespoons coconut butter
1 Tablespoon maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
pinch sea salt
1/4 cup water to blend

Directions:

- Add all ingredients into a food processor and process until well combined.

- You may need to stop and occasionally scrape down the sides to get the mixture moving. Add water as needed to help bind.

-Take a tablespoon of the mixture and roll it into a ball. Repeat until mixture is finished. 

-Roll the balls in extra Matcha powder (optional).

-Store in the fridge for 5-7 days.
