This delicious citrus infused fruitcake is sure to be a hit at any Christmas!
Gluten-Free + Dairy-Free Fruitcake
Ingredients:
1 ½ cups almond meal
½ tsp sea salt
½ tsp baking soda
½ cup chopped dried dates
1 cup dried raisins, cherries or cranberries (or a mix of all 3!)
1 cup crushed walnuts
4 eggs (beaten)
2 TBSP coconut oil
1 TBSP coconut sugar
1 TBSP vanilla
1 TBSP orange zest and lemon zest
Directions:
1. Preheat oven to 320F
2. Combine almond flour, salt and baking soda in a bowl
3. Stir in fruits and nuts
4. In separate bowl combine remaining ingredients
5. Mix wet ingredients with dry ingredients
6. Pour into a lined loaf tin and bake for 40-45 mins until cooked through
7. Allow to cool in tin before serving
